照完照片,男人心情非常好,高兴地说道“非常感谢你对我们工作的支持。”说从怀里拿出一张黑色的卡牌递到李潇手上。“这是我们的高级vip卡,凭借这张卡到我们这里消费,所有消费一律6折。
今天难得遇到两位,今天两位的顾客,由在下请客。“
李潇连忙要推辞,“这怎么可以,你给我们打折就好了。”
男人露出一个感慨的笑容“现在能做好人好事的人实在太少了,何况还是向客人这种拯救了几十人的好人,能有幸接待英雄,是我们小蟹居的荣幸,请你务必让我做客。“
“这。”李潇有些犹豫,他虽然节省,但是从不愿意占人家便宜。
这时候,姜映雪拉了拉李潇,笑着开口说道”既然店长都这样说了,我们就却之不恭了。“
男人满意点头,“那好,我就不打扰两位了,如果有任何问题,立刻找我。”
两人离开。
李潇和姜映雪回到雅座,很快,餐点就上桌了。
这里的258一份的蟹黄面不是一碗碗的,而是一套套的。
先上来的是主食,一碗鸡蛋面,据说是人工手打出来的。
盛面的碗足有李潇的脸那么大,素面的分量不多,大概七八口就能吃完,不过小蟹居的这个面是可以无限续的,也就还算说得过去。
鸡蛋面上有几颗小葱作为点翠,显得那样单调。
随后上来的是已经剥好的蟹肉,根据店家的介绍,一份蟹黄面,需要四只公蟹以及四母母蟹才能完成,也就是,这里是8只无辜大闸蟹的全部肉体了。
蟹肉的分量很多,用4个日式风格的小碗分别装着四份蟹肉。
紧接着蟹肉上桌的,当然就是这次的主角了,秃黄油。
秃黄油的做法非常简单,在锅中放入猪油,7成油温的时候加入姜末蒜末,把姜末蒜末炒香,加入大闸蟹母蟹的黄,以及公蟹的膏,均匀翻炒,翻炒的动作不能大,不然都碎了,就会变湖了。
等蟹黄炒出香味,加入黄酒和料酒,起到去腥增香的效果,小火熬一下,等锅里的酒液蒸发,就可以出锅了。
秃黄油的量还算可观,装了2个小碗,小碗的大小大概就和平时小半碗饭那么多。
随后小姐姐又端了一碗漂浮着几颗葱花的清汤,这是用来拌面用的。
大部分店铺会用蟹壳,虾皮,龙骨,鸡骨熬制。
在拌面的时候加上几勺清汤,入口就不会那么干,而且味道会更加鲜甜,蟹黄蟹肉的味道也可以更好的融入面里面。
最后上桌的是配料和调料,一小份葱花,一小份姜末,一小份金银蒜,装金银蒜的碟子稍大,因为分量也比较多,碟子内一边装的是银蒜,也就是生蒜,一边则装着金蒜,也就是炸至金黄的蒜末。
调料则有两种,一种是蟹醋,一种是酱油。
